Went to our local farmers market yesterday and couldn’t resist picking up one of these massive Sicilian cauliflowers. They are in season right now and I have been too intimidated by them over the past few years because they are quite the commitment with their size. What on earth can I do with this thing?? It has been sitting here in the kitchen for a day just mocking me. Anyone know any recipes that they can share?
My beautiful grandmother taught me a great recipe. You steam the califlower, mash it after you drain it really well. Mix as you would for a meatball. Make a patty, then fry in olive oil. Top with a little marinara and Romano. This is one of our family favs!
